In a large pot, heat chicken broth at medium heat. 2. Meanwhile, sautee protein with 1 tsp oil in a frying pan for a few minutes. Add protein to the broth. 3. Add the vegetables to the chicken broth, and lower the heat to medium low 4. In a clean pan, melt butter at medium heat. Add flour, and cook for a couple of minutes. Gradually add milk whisking constantly so that the sauce doesn't form lumps. 5. Add the sauce to soup and stir well. Season with salt and pepper. Add cheese if you want. 6. Cook uncovered for 10 minutes or until the soup thickens. 7.
